DARK CHOCOLATE NUT BUTTER CUPS

I truly believe that your relationship with yourself sets the tone for every other relationship you have. If you learn to take care of yourself, you will be better suited to care for those around you.

I am showing myself love today by making some of my favourite, easy treats....dark chocolate almond butter cups. In the spirit of love and kindness, I am sharing the recipe with you below. These chocolate cups are simple to make, full of real ingredients and will definitely make you feel loved! 

These chocolate cups are so simple to make and can be adapted depending on what you have in your cupboard. You can use any nut butter or seed for the filling. Another great option is to use granola instead of the seeds. 

Now, please go make these cups and don’t forget that the most important relationship you will ever have is the one with yourself. Take a moment to reflect on what your body and mind do for you. Say something nice to yourself and always be kind to you!

Dark Chocolate Nut Butter Cups 

Ingredients

  • 8 oz. dark chocolate (I used 2 4-oz. chocolate bars)

  • 1 tablespoon coconut oil

  • 1/4 cup almond butter (or any nut butter)

  • 1-2 teaspoon goji berries (or granola)

  • 1-2 teaspoon pumpkin seeds

Instructions

  1. Line a muffin tin with 12 mini muffin liners and set aside. 

  2. Melt chocolate and coconut oil in a saucepan or microwave. Watch it carefully as there is nothing worse than burning your chocolate! Mix in the goji berries, pumpkin seeds or granola. . 

  3. Once the chocolate has fully melted, spoon in around 1 teaspoon of melted chocolate and seed mix onto the bottom of each muffin liner. Tap the pan so that the chocolate evens out. Freeze for around 10 minutes to harden.

  4. Next, scoop in a 1/2 teaspoon of almond butter or more and place on top of the first chocolate layer. Tap the pan to even out the almond butter. Freeze for around 10 minutes to set.

  5. Finally, spoon in the second layer of melted chocolate on top of the almond butter. There should be enough chocolate left for around 1.5 

  6. teaspoons of chocolate per cup (or a little more). 

  7. Finally, freeze for 30 minutes to an hour to fully set.

  8. Devour! Share with friends or don’t! I will never tell!
